Best ever fat free banana bread * Banana bread senza grassi

Merendine confezionate? No grazie, tendo a evitarle. E quindi?

Time for breakfast (or snack): what to propose to a baby gourmand  who refuses milk, biscuits, cereals? Packaged snacks? No thanks, I tend to avoid them. And so?

After several attempts, I finally worked out my recipe for what, without false modesty, is the best banana bread possible, fat free! Miss B loves my banana bread and I’m happy because I know that it is a delicious sweet, balanced and fat free! Along with a freshly squeezed orange juice is perfect as a snack or  for breakfast.  Banana bread, if wrapped , stays moist for several days and it’s really tasty, so that even Miss B’s daddy  is very happy when I make a loaf!

    banana bread

    – 3/4 cup sugar

    – zest of 1 organic lemon and the juice of 1/2 lemon

    – 1 cup of flour

    – 1 teaspoon of organic yeast

    – 1 large egg

    – a pinch of salt

How to: put all the ingredients in a bowl and with a blender  whisk  for a few minutes until you get a soft and velvety dough. In the oven at 180 ° C bake a mold pan filled to 3/4 of the dough for 15 ‘and then for a further 30’ at 160 ° C. Test with a toothpick that is well cooked, remove from the oven, leave in the mold for 10 ‘ and then remove the banana bread from the mold and let it cool on wire rack or in a dish.
